This paper focuses, with a philological and linguistic perspective, on the culinary manuscript known as the “Anonimo Meridionale” (olim Sorengo, Fondation Bibliothèque Internationale de Gastronomie, Inv. 1339, cc. 1r-15v), one of the five surviving witnesses of the Liber de coquina tradition, also known as “federiciana”. Conducted with the aid of newly collected materials for the AtLiTeG Project (Atlas of the Language and Texts of Italian Gastronomic Culture from the Medieval Period to the Unification), this research allows for the positioning of the text in central Italy.
